This is why decision theory is important to understand how a human brain works and how we make decisions.
One of the books that comes to mind is certainly Daniel Kahneman's "Thinking, fast and slow".
And since 2021 there is a new book out there from Daniel Kahneman: "Noise". Again, the quest is to find out how we arrive to a decision and why to experts with the identical information come to completely different choices.
